Grapes of Puglia, identity authentic

In Puglia, the total production of Cantine Polvanera extends over about 100 hectares cultivated with Primitivo, Aleatico, Aglianico, Minutolo, Moscato, Falangina, Marchione, and Bianco d’Alessano.
Our labels differ from each other by the age of the vineyards and the type of soil on which they are located; The altitudes, however, range from 300 to 450 meters; at these elevations you benefit from significant temperature fluctuations that favor in Puglia the expression of particularly fine and elegant aromas.

The training systems are alberello (for the old sixty-year-old vines) and spur-pruned cordon, all cultivated organically. Our Apulian wines remain faithful to the authentic flavors of the grape; the grapes from the old bush vines are vinified with modern but absolutely simple winemaking techniques.

The maturation and aging phases take place in stainless steel tanks and in bottle. No aging in wood to avoid masking the native aromas of Primitivo with notes of wood and to prevent oxidative evolutions. This synthesis of innovation and tradition has given rise to a wine strongly tied to the territory, with characteristic notes of elegance, drinkability, and extraordinary freshness and minerality.
